2 cups: stemmed, pitted and finely chopped fully ripe sweet cherries
2 tablespoons: fresh lemon juice
4 1/4 cups: granulated sugar, measured in a bowl
3/4 cup: water
1 (1 3/4-ounce) package: powdered fruit pectin
Have ready clean plastic freezer containers with lids,
Mix chopped cherries, lemon juice and sugar in a bowl; let stand for 10 minutes, stirring occasionally,
Mix water and pectin in a small saucepan. Bring to a boil over high heat, stirring constantly, boiling and stirring for 1 minute. Add to cherries mixture; stir 3 minutes or until sugar is dissolved and no longer grainy.
Immediately fill containers to within 1/2-inch of tops. Wipe off top edges and cover with lids. Let stand at room temperature 24 hours. Jam is now ready. Freeze. Store in freezer up to 1 year. Thaw in refrigerator before using.
May be store in refrigerator for up to 3 weeks.
